As a Type 1 (diabetes mellitus) I must maintain caloric intake to coincide with activity levels. However, less is more! The key is clean, wholesome ingredients cooked at home. As Michael Pollan says “If it came from a plant, eat it; if it was made IN a plant avoid it.” Also, “Eat food. Not a lot. Mostly plants.”

It's amazing how toxic and depleted our modern food supply has become, when in fact, it was intended to sustain and heal us.
I recently read a cookbook (on Kindle) called Indian Superspices, and the first chapter or so traces the evolution of Indian medicine -- before presenting about 60 lab-inspired recipes. I learned that physicians from the West would go to India to learn about medicine.
What I liked best were extracts from medical university research from all around the world, attesting that anti oxidant/microbial/inflammatory (and other) properties of certain spices surpassed the efficacy of common-day pharmaceuticals.
And yes, the processing and cooking of food is also key to good health. A good option is slow cooking in organic unglazed clay, such as the VitaClay cooker, which is alkalizing.

You make an important point. The benefits of fasting have been known for a long time and are part of traditional medicine. It's important for people to realize this since so many are convinced that they are starving when they fast.
