Very informative article - evidence based still for both common man and medics. Easy to read and understand. Loved even the basics of processed foods, calorie restriction and the fasting regimes. Good work Suman.

Given my grandfather was a chef, I have always bought the best quality raw ingredients and processed them minimally. However, there are many things that affect the micro and macro nutrient value of the food we buy. Fruits and vegetables that come from all over the world (and the country) begin losing their nutrient value at the point of picking. By the time we buy them in the grocery store and cook them (the longer they cook, the more nutrients lost) their nutrient value is considerably diminished, if it exists at all. Therefore, it is important to buy the freshest possible produce and blanche or minimally steam (raw or al dente is best). Unfortunately, it is harder and harder to get all the nutrition you need from the foods you eat. Therefore, vitamin supplementation is an absolute necessity.

We keep a diet similar to the one you have developed, minus the fasting which we will consider adding.

Thank you for sharing your knowledge. I had two questions:

1 - You've put 'Frozen' down as a type of processing. I've heard from other areas that frozen Veg locks in more nutrients. Do you have any thoughts on this?

2 - I exercise regularly. I couldn't imagine doing a heavy weights session or running 10k on my fasting days. What do people who fast do?

Thank you for you comments. 1. I am not aware of it but will look into it. 2. Fasting actually increases the lean mass. People do exercise during the fasting, may be less intensive.

Isn't cooking considered a form of processing? It should be it alters the molecular structure of the food and it's something we do to the majority of our food.

Thank you for you comments. Predominantly, I am talking about food in the original form, as in unprocessed. We have to increase the consumption of unprocessed and reduce the processed food. Cooking unadulterated, unprocessed foods meta, fish, vegetables is the key.

Thank you Karen. I totally understand the concern in related to the foods from different countries. We keep trying to consume freshest and wholesome ingredients in our diet as it does show improving well being.
